A delicious and creamy Toasted Marshmallow Pumpkin Parfait, perfect for fall.

- 2 cups pumpkin puree
- 1 cup Greek yogurt
- 1/2 cup brown sugar
- 1 teaspoon vanilla extract
- 1 teaspoon pumpkin pie spice
- 1/2 teaspoon salt
- 1 cup crushed graham crackers
- 1 cup mini marshmallows
- 1/4 cup chopped pecans (optional)
Instructions
- In a mixing bowl, combine the pumpkin puree, Greek yogurt, brown sugar, vanilla extract, pumpkin pie spice, and salt. Mix until smooth and well combined.
- In serving glasses or bowls, layer the pumpkin mixture and crushed graham crackers. Start with a layer of pumpkin mixture, followed by a layer of graham crackers, and repeat until the glasses are filled, finishing with a layer of pumpkin on top.
- Preheat your broiler. Spread the mini marshmallows evenly over the top layer of pumpkin in each parfait.
- Place the parfaits under the broiler for 1-2 minutes, watching closely, until the marshmallows are golden brown and toasted.
- Remove from the oven and let cool for a few minutes. If desired, sprinkle chopped pecans on top before serving.
Notes
- For a lighter version, substitute the Greek yogurt with low-fat yogurt or a dairy-free alternative.
- You can also add a layer of whipped cream for extra creaminess.
- For a chocolate twist, drizzle some chocolate sauce over the top before serving.
