Ingredients

  • 1 cup Greek yogurt
  • 1/2 cup brown sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon salt
  • 1 cup crushed graham crackers
  • 1 cup mini marshmallows
  • 1/4 cup chopped pecans (optional)

Instructions

  1. In a mixing bowl, combine the pumpkin puree, Greek yogurt, brown sugar, vanilla extract, pumpkin pie spice, and salt. Mix until smooth and well combined.
  2. In serving glasses or bowls, layer the pumpkin mixture and crushed graham crackers. Start with a layer of pumpkin mixture, followed by a layer of graham crackers, and repeat until the glasses are filled, finishing with a layer of pumpkin on top.
  3. Preheat your broiler. Spread the mini marshmallows evenly over the top layer of pumpkin in each parfait.
  4. Place the parfaits under the broiler for 1-2 minutes, watching closely, until the marshmallows are golden brown and toasted.
  5. Remove from the oven and let cool for a few minutes. If desired, sprinkle chopped pecans on top before serving.
