- 1 cup vegetable oil (for frying)

Instructions
- Start by seasoning the pork chops with salt, black pepper, garlic powder, and onion powder on both sides. Let them sit at room temperature for about 15 minutes to absorb the flavors.
- In a shallow dish, place the flour. In another dish, whisk together the eggs and buttermilk until well combined.
- Dredge each pork chop in the flour, shaking off any excess. Then dip them into the egg mixture, allowing any excess to drip off, and finally coat them again in the flour. Set aside on a plate.
- In a large skillet, heat the vegetable oil over medium-high heat. Once hot, carefully add the pork chops and fry for about 5-7 minutes on each side, or until golden brown and cooked through (internal temperature should reach 145°F). Remove the chops and place them on a paper towel-lined plate to drain excess oil.
- In the same skillet, reduce the heat to medium and add the chopped bacon. Cook until crispy, about 5 minutes. Remove the bacon with a slotted spoon and set aside, leaving the drippings in the skillet.
- Sprinkle 2 tablespoons of flour into the bacon drippings and whisk to combine, cooking for about 1 minute until lightly browned. Gradually whisk in the milk, stirring constantly until the gravy thickens. Season with salt and pepper to taste.
- Serve the fried pork chops topped with the bacon gravy and the reserved crispy bacon.

- For extra flavor, marinate the pork chops in buttermilk for a few hours or overnight before cooking.
- Try adding a pinch of cayenne pepper to the flour for a spicy kick in the breading.
