The Best Ever Caramel Brownie Cheesecake is a rich and decadent dessert that combines the flavors of chocolate brownies, creamy cheesecake, and sweet caramel, making it an unforgettable treat.


Ingredients

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsweetened cocoa powder
  • ½ cup granulated sugar
  • ½ cup unsalted butter, melted
  • 2 (8-ounce) packages cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1 cup sour cream
  • 1 cup semi-sweet chocolate chips
  • ½ cup caramel sauce
  • 1 teaspoon sea salt (for garnish)

Instructions

  1. Preheat your oven to 325°F. Grease a 9-inch springform pan.
  2. In a medium bowl, combine graham cracker crumbs, cocoa powder, sugar, and melted butter. Mix until well combined. Press the mixture firmly into the bottom of the prepared springform pan to form the crust. Bake for 10 minutes, then remove from the oven and let cool.
  3. In a large mixing bowl, beat the softened cream cheese with 1 cup of sugar and vanilla extract until smooth and creamy. Add the eggs one at a time, mixing well after each addition. Stir in the sour cream until fully incorporated.
  4. Melt the chocolate chips in a microwave-safe bowl in 30-second intervals, stirring in between until smooth. Allow to cool slightly, then fold the melted chocolate into the cream cheese mixture until combined.
  5. Pour half of the cheesecake batter over the cooled crust. Drizzle half of the caramel sauce over the batter. Pour the remaining cheesecake batter on top, and finish with another drizzle of caramel sauce. Use a knife to gently swirl the caramel into the cheesecake batter.
  6. Bake in the preheated oven for 55-60 minutes, or until the center is set but still slightly jiggly. Turn off the oven and crack the door, allowing the cheesecake to cool in the oven for 1 hour. Remove from the oven and refrigerate for at least 4 hours, preferably overnight.
  7. Before serving, sprinkle sea salt on top for an added flavor boost.

Notes

  • For a richer flavor, try adding a tablespoon of espresso powder to the cheesecake batter.
  • You can also substitute the caramel sauce with chocolate sauce for a double chocolate treat.
