Description

A delicious dessert that combines the rich flavors of Thai tea with the creamy texture of crème brûlée.


Ingredients

  • 1 cup heavy cream
  • 1 cup whole milk
  • 1/2 cup granulated sugar
  • 4 large egg yolks
  • 2 tablespoons loose Thai tea leaves (or 45 Thai tea bags)
  • 1 teaspoon vanilla extract
  • 1/4 cup granulated sugar (for topping)

Instructions

  1. Preheat your oven to 325°F.
  2. In a saucepan, combine the heavy cream, whole milk, and Thai tea leaves over medium heat. Stir occasionally until the mixture is hot but not boiling. Remove from heat and let steep for 15 minutes.
  3. Strain the tea mixture through a fine-mesh sieve into a bowl, discarding the tea leaves.
  4. In another bowl, whisk together the egg yolks and 1/2 cup of granulated sugar until well combined.
  5. Slowly pour the warm tea-infused cream into the egg mixture while whisking continuously to temper the eggs.
  6. Add the vanilla extract and mix until smooth.
  7. Pour the mixture into ramekins, filling them about three-quarters full.
  8. Place the ramekins in a baking dish and fill the dish with hot water until it reaches halfway up the sides of the ramekins.
  9. Bake for 30-35 minutes, or until the edges are set but the centers are still slightly jiggly.
  10. Remove from the oven and let cool to room temperature. Cover and refrigerate for at least 4 hours, or overnight.
  11. When ready to serve, sprinkle a thin layer of granulated sugar on top of each custard.
  12. Using a kitchen torch, carefully caramelize the sugar until it forms a crispy top. If you don’t have a torch, you can place the ramekins under a broiler for 1-2 minutes, watching closely to avoid burning.
