- 1 pound large shrimp, peeled and deveined
- 2 tablespoons lemongrass, finely chopped
- 2 tablespoons fish sauce
- 2 tablespoons lime juice
- 2 tablespoons brown sugar
- 1 tablespoon chili paste (such as sambal oelek)
- 2 cloves garlic, minced
- 1 tablespoon vegetable oil
- 1 teaspoon salt
- 1/4 teaspoon black pepper
- Fresh cilantro, for garnish
- Lime wedges, for serving
Instructions
- In a medium bowl, combine lemongrass, fish sauce, lime juice, brown sugar, chili paste, garlic, vegetable oil, salt, and black pepper. Mix well to create a marinade.
- Add the shrimp to the marinade, ensuring they are well-coated. Cover the bowl and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.
- Preheat the grill to medium-high heat.
- Thread the marinated shrimp onto skewers (if using wooden skewers, soak them in water for 30 minutes beforehand to prevent burning).
- Grill the shrimp for 2-3 minutes on each side, or until they are pink and opaque.
- Remove the shrimp from the grill and let them rest for a minute.
- Serve the grilled shrimp garnished with fresh cilantro and lime wedges on the side.
Notes
- For a spicier kick, add extra chili paste or sliced fresh chilies to the marinade.
- Serve the shrimp over a bed of jasmine rice or with a side of grilled vegetables for a complete meal.
