  • 2 pounds boneless, skinless chicken thighs
  • 1 cup soy sauce
  • 1 cup brown sugar, packed
  • 1/2 cup bourbon
  • 1/4 cup ketchup
  • 1 tablespoon minced garlic
  • 1 tablespoon minced ginger
  • 1 teaspoon onion powder
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)
  • 2 tablespoons cornstarch
  • 2 tablespoons water
  • 2 green onions, sliced (for garnish)
  • Cooked rice (for serving)

Instructions

  1. Place the chicken thighs in the crockpot.
  2. In a medium bowl, whisk together the soy sauce, brown sugar, bourbon, ketchup, garlic, ginger, onion powder, black pepper, and red pepper flakes (if using).
  3. Pour the sauce over the chicken in the crockpot, making sure the chicken is well coated.
  4. Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is tender and cooked through.
  5. Once cooked, remove the chicken from the crockpot and set aside.
  6. In a small bowl, mix the cornstarch and water to create a slurry. Stir this mixture into the sauce in the crockpot.
  7. Turn the crockpot to high and let the sauce thicken for about 10-15 minutes, stirring occasionally.
  8. Shred the chicken using two forks and return it to the crockpot, mixing it with the thickened sauce.
  9. Serve the bourbon chicken over cooked rice and garnish with sliced green onions.
