Ingredients

  • 2 cups frozen tater tots
  • 4 large eggs
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup cooked and crumbled breakfast sausage (or bacon)
  • 1/4 cup diced green onions
  • 1/4 cup diced bell pepper
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil
  • Sour cream (for serving, optional)
  • Hot sauce (for serving, optional)

Instructions

  1. Preheat the oven to 425°F. Spread the frozen tater tots on a baking sheet in a single layer and bake for 20-25 minutes, or until golden brown and crispy, flipping halfway through.
  2. While the tater tots are baking, heat olive oil in a skillet over medium heat. Add the diced bell pepper and sauté for about 3-4 minutes until softened.
  3. Crack the eggs into a bowl, add salt and pepper, and whisk until well combined. Pour the eggs into the skillet with the bell pepper and scramble until fully cooked, about 3-4 minutes.
  4. Once the tater tots are done, remove them from the oven and divide them among serving bowls.
  5. Top each bowl of tater tots with scrambled eggs, crumbled sausage or bacon, shredded cheddar cheese, and diced green onions.
  6. Serve immediately with sour cream and hot sauce on the side, if desired.
