- 2 cups frozen tater tots
- 4 large eggs
- 1/2 cup shredded cheddar cheese
- 1/2 cup cooked and crumbled breakfast sausage (or bacon)
- 1/4 cup diced green onions
- 1/4 cup diced bell pepper
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon olive oil
- Sour cream (for serving, optional)
- Hot sauce (for serving, optional)
Instructions
- Preheat the oven to 425°F. Spread the frozen tater tots on a baking sheet in a single layer and bake for 20-25 minutes, or until golden brown and crispy, flipping halfway through.
- While the tater tots are baking, heat olive oil in a skillet over medium heat. Add the diced bell pepper and sauté for about 3-4 minutes until softened.
- Crack the eggs into a bowl, add salt and pepper, and whisk until well combined. Pour the eggs into the skillet with the bell pepper and scramble until fully cooked, about 3-4 minutes.
- Once the tater tots are done, remove them from the oven and divide them among serving bowls.
- Top each bowl of tater tots with scrambled eggs, crumbled sausage or bacon, shredded cheddar cheese, and diced green onions.
- Serve immediately with sour cream and hot sauce on the side, if desired.
Notes
- For a vegetarian option, skip the sausage and add sautéed mushrooms or spinach instead.
- Customize your bowl by adding avocado slices or pico de gallo for extra flavor and freshness.
