Sweet Strawberry Shortcake Cheesecake Rolls are a delightful dessert that combines the flavors of strawberries and cheesecake in a convenient roll format.


Ingredients

  • 2 cups fresh strawberries, hulled and sliced
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 (8-ounce) package cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon lemon juice
  • 1/2 teaspoon vanilla extract
  • 1 (8-ounce) package refrigerated crescent roll dough
  • 1/4 cup graham cracker crumbs
  • 1 tablespoon melted butter
  • Whipped cream, for serving

Instructions

  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. In a medium bowl, combine the sliced strawberries, granulated sugar, and 1 teaspoon of vanilla extract. Toss to coat and set aside to macerate for about 10 minutes.
  3. In another bowl, beat together the softened cream cheese, powdered sugar, lemon juice, and 1/2 teaspoon of vanilla extract until smooth and creamy.
  4. Unroll the crescent roll dough and separate it into triangles.
  5. Spread a thin layer of the cream cheese mixture over each triangle of dough.
  6. Place a spoonful of the macerated strawberries on top of the cream cheese layer.
  7. Starting from the wide end, roll each triangle up tightly and place them seam-side down on the prepared baking sheet.
  8. In a small bowl, mix the graham cracker crumbs with the melted butter. Sprinkle this mixture over the tops of the rolls.
  9. Bake in the preheated oven for 12-15 minutes or until golden brown.
  10. Allow the rolls to cool slightly before serving. Top with whipped cream and any remaining strawberries.

Notes

  • For a chocolate twist, drizzle melted chocolate over the rolls before serving.
  • You can substitute blueberries or raspberries for the strawberries for a different flavor profile.
