Delicious Sweet Potato Pie Bars topped with toasted marshmallows, perfect for dessert lovers.

- 2 medium sweet potatoes (about 1 pound), peeled and cubed
- 1 cup granulated sugar
- 1/2 cup packed brown sugar
- 1/2 cup unsalted butter, softened
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon ground ginger
- 1/4 teaspoon salt
- 1 cup all-purpose flour
- 1/2 teaspoon baking powder
- 1 cup mini marshmallows
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish or line it with parchment paper.
- Boil the sweet potatoes in water until tender, about 15-20 minutes. Drain and mash until smooth.
- Measure out 1 cup of the mashed sweet potatoes and set aside to cool slightly.
- In a large mixing bowl, beat together the granulated sugar, brown sugar, and softened butter until creamy.
- Add the eggs, vanilla extract, cinnamon, nutmeg, ginger, and salt. Mix until well combined.
- Stir in the mashed sweet potatoes until fully incorporated.
- In a separate bowl, whisk together the flour and baking powder. Gradually add the dry ingredients to the sweet potato mixture, stirring until just combined.
- Pour the batter into the prepared baking dish and spread it evenly.
- Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean. Remove from the oven and let cool for 10 minutes.
- Preheat the broiler on your oven. Sprinkle the mini marshmallows evenly over the top of the cooled sweet potato bars.
- Place the baking dish under the broiler for 1-2 minutes, watching closely, until the marshmallows are golden brown and toasted.
- Remove from the oven and let cool completely before cutting into bars.
- For best results, chill in the refrigerator for about 30 minutes before serving.
Notes
- Consider adding a sprinkle of chopped pecans or walnuts on top of the marshmallows before toasting for added crunch.
- You can substitute the mini marshmallows with a layer of whipped cream for a lighter finish.
