Delicious Sweet Potato Pie Bars topped with toasted marshmallows, perfect for dessert lovers.


Ingredients

  • 2 medium sweet potatoes (about 1 pound), peeled and cubed
  • 1 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon salt
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1 cup mini marshmallows

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish or line it with parchment paper.
  2. Boil the sweet potatoes in water until tender, about 15-20 minutes. Drain and mash until smooth.
  3. Measure out 1 cup of the mashed sweet potatoes and set aside to cool slightly.
  4. In a large mixing bowl, beat together the granulated sugar, brown sugar, and softened butter until creamy.
  5. Add the eggs, vanilla extract, cinnamon, nutmeg, ginger, and salt. Mix until well combined.
  6. Stir in the mashed sweet potatoes until fully incorporated.
  7. In a separate bowl, whisk together the flour and baking powder. Gradually add the dry ingredients to the sweet potato mixture, stirring until just combined.
  8. Pour the batter into the prepared baking dish and spread it evenly.
  9. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean. Remove from the oven and let cool for 10 minutes.
  10. Preheat the broiler on your oven. Sprinkle the mini marshmallows evenly over the top of the cooled sweet potato bars.
  11. Place the baking dish under the broiler for 1-2 minutes, watching closely, until the marshmallows are golden brown and toasted.
  12. Remove from the oven and let cool completely before cutting into bars.
  13. For best results, chill in the refrigerator for about 30 minutes before serving.
