Description

Ingredients

  • 3 (8-ounce) packages cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1 cup sour cream
  • 1/2 cup heavy cream
  • 1 teaspoon cotton candy flavoring (or extract)
  • Pink food coloring (optional)
  • Cotton candy for topping

Instructions

  1. Preheat the oven to 325°F.
  2. In a medium bowl, combine graham cracker crumbs, melted butter, and 1/4 cup sugar. Mix until well combined.
  3. Press the mixture firmly into the bottom of a 9-inch springform pan to form the crust. Bake for 10 minutes, then remove from the oven and let cool.
  4. In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy.
  5. Gradually add 1 cup of sugar and continue to beat until well combined.
  6. Add the vanilla extract, eggs (one at a time), sour cream, heavy cream, and cotton candy flavoring. Mix until smooth.
  7. If desired, add a few drops of pink food coloring to achieve a pastel pink hue.
  8. Pour the cheesecake batter over the cooled crust in the springform pan.
  9. Bake for 55-60 minutes, or until the edges are set and the center is slightly jiggly.
  10. Turn off the oven and crack the door, allowing the cheesecake to cool in the oven for 1 hour.
  11. Remove from the oven and let cool to room temperature, then refrigerate for at least 4 hours or overnight.
  12. Before serving, top the cheesecake with cotton candy for a fun and festive touch.
