- 2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted

- 1 teaspoon vanilla extract

- 1 cup sour cream
- 1/2 cup heavy cream
- 1 teaspoon cotton candy flavoring (or extract)
- Pink food coloring (optional)

Instructions
- Preheat the oven to 325°F.
- In a medium bowl, combine graham cracker crumbs, melted butter, and 1/4 cup sugar. Mix until well combined.
- Press the mixture firmly into the bottom of a 9-inch springform pan to form the crust. Bake for 10 minutes, then remove from the oven and let cool.
- In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy.
- Gradually add 1 cup of sugar and continue to beat until well combined.
- Add the vanilla extract, eggs (one at a time), sour cream, heavy cream, and cotton candy flavoring. Mix until smooth.
- If desired, add a few drops of pink food coloring to achieve a pastel pink hue.
- Pour the cheesecake batter over the cooled crust in the springform pan.
- Bake for 55-60 minutes, or until the edges are set and the center is slightly jiggly.
- Turn off the oven and crack the door, allowing the cheesecake to cool in the oven for 1 hour.
- Remove from the oven and let cool to room temperature, then refrigerate for at least 4 hours or overnight.
- Before serving, top the cheesecake with cotton candy for a fun and festive touch.
Notes
- For a lighter version, substitute half of the cream cheese with Greek yogurt.
- For a fun twist, add colorful sprinkles on top along with the cotton candy.
