- 2 cups fresh sweet corn kernels (approximately 4 ears of corn)
- 2 juicy peaches, chopped
- 1 red bell pepper, chopped
- 1/4 cup finely diced red onion
- 1/4 cup chopped fresh cilantro
- 1/4 cup crumbled feta cheese
- 2 tablespoons extra virgin olive oil
- 1 tablespoon apple cider vinegar
- 1 teaspoon honey
- Salt and freshly ground black pepper to taste
Instructions
- Begin by cooking the corn kernels in boiling water for about 3-5 minutes until tender, then drain and let cool.
- In a large mixing bowl, combine the cooled corn, chopped peaches, red bell pepper, red onion, and cilantro.
- In a separate small bowl, blend together the olive oil, apple cider vinegar, honey, salt, and pepper until the mixture is smooth and well combined.
- Drizzle the dressing over the corn and peach mixture, and carefully fold everything together to ensure even coating.
- Finally, sprinkle the crumbled feta cheese on top and gently mix again.
- Allow the salad to rest in the refrigerator for a minimum of 30 minutes to enhance the flavors before serving.
Notes
- For an extra crunch, add diced cucumber or chopped jicama.
- Swap out peaches for nectarines or mango for a delightful twist.
