- 2 cups cottage cheese
- 1 cup fresh blueberries (or frozen, thawed)
- 1/2 cup rolled oats
- 1/4 cup honey or maple syrup
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
- 1/4 cup chopped walnuts (optional)
- Cooking spray or butter for greasing
Instructions
- Preheat your oven to 350°F (175°C). Grease an 8×8-inch baking dish with cooking spray or butter.
- In a large mixing bowl, combine the cottage cheese, rolled oats, honey or maple syrup, eggs, vanilla extract, baking powder, cinnamon, and salt. Mix well until all ingredients are fully incorporated.
- Gently fold in the blueberries and walnuts if using, being careful not to break the berries.
- Pour the mixture into the prepared baking dish, spreading it evenly.
- Bake in the preheated oven for 30-35 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.
- Allow the bake to cool for about 10 minutes before slicing into squares and serving.
Notes
- For added flavor, mix in a teaspoon of lemon zest or a splash of almond extract.
