Ingredients

  • 1/4 cup honey or maple syrup
  • 2 large eggs

  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/4 cup chopped walnuts (optional)
  • Cooking spray or butter for greasing

Instructions

  1. Preheat your oven to 350°F (175°C). Grease an 8×8-inch baking dish with cooking spray or butter.
  2. In a large mixing bowl, combine the cottage cheese, rolled oats, honey or maple syrup, eggs, vanilla extract, baking powder, cinnamon, and salt. Mix well until all ingredients are fully incorporated.
  3. Gently fold in the blueberries and walnuts if using, being careful not to break the berries.
  4. Pour the mixture into the prepared baking dish, spreading it evenly.
  5. Bake in the preheated oven for 30-35 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.
