- 1 cup halved grape tomatoes

- 1 cup diced sweet corn
- 1/2 cup finely chopped green onions
- 1/4 cup shredded purple cabbage
- 1/4 cup pumpkin seeds
- 1/4 cup crumbled goat cheese
- 1/4 cup avocado oil
- 2 tablespoons balsamic vinegar
- 1 tablespoon maple syrup
- 1 teaspoon whole grain mustard
- Salt and freshly cracked black pepper to taste
Instructions
- Place the mixed greens in a large serving bowl.
- Add the grape tomatoes, zucchini, sweet corn, green onions, purple cabbage, pumpkin seeds, and goat cheese on top.
- In a separate bowl, combine the avocado oil, balsamic vinegar, maple syrup, whole grain mustard, salt, and black pepper.
- Whisk the mixture until it’s smooth and well-blended.
- Pour the dressing over the salad and gently toss everything together until all the ingredients are coated.
- Enjoy immediately or let it chill in the refrigerator for about 20 minutes to enhance the flavors.
