Ingredients

  • 1 cup halved grape tomatoes
  • 1 cup diced zucchini
  • 1 cup diced sweet corn
  • 1/2 cup finely chopped green onions
  • 1/4 cup shredded purple cabbage
  • 1/4 cup pumpkin seeds
  • 1/4 cup crumbled goat cheese
  • 1/4 cup avocado oil
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon maple syrup
  • 1 teaspoon whole grain mustard
  • Salt and freshly cracked black pepper to taste

Instructions

  1. Place the mixed greens in a large serving bowl.
  2. Add the grape tomatoes, zucchini, sweet corn, green onions, purple cabbage, pumpkin seeds, and goat cheese on top.
  3. In a separate bowl, combine the avocado oil, balsamic vinegar, maple syrup, whole grain mustard, salt, and black pepper.
  4. Whisk the mixture until it’s smooth and well-blended.
  5. Pour the dressing over the salad and gently toss everything together until all the ingredients are coated.
