A delicious grilled cheese sandwich filled with ricotta cheese, fresh spinach, and sun-dried tomatoes, perfect for a quick meal.

- 2 slices of sourdough bread
- 2 tablespoons unsalted butter, softened
- 1/4 cup ricotta cheese
- 1/4 cup fresh spinach, chopped
- 1/4 cup sun-dried tomatoes, chopped (packed in oil, drained)
- 1/4 teaspoon garlic powder
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup shredded mozzarella cheese
Instructions
- Heat a skillet over medium heat.
- In a small bowl, mix together the ricotta cheese, chopped spinach, sun-dried tomatoes, garlic powder, salt, and black pepper until well combined.
- Spread 1 tablespoon of softened butter on one side of each slice of sourdough bread.
- Place one slice of bread, buttered side down, in the skillet.
- Spread the ricotta mixture evenly over the bread in the skillet.
- Sprinkle the shredded mozzarella cheese on top of the ricotta mixture.
- Top with the second slice of bread, buttered side up.
- Cook for about 3-4 minutes until the bottom is golden brown, then carefully flip the sandwich and cook for another 3-4 minutes until the other side is golden and the cheese is melted.
- Remove from the skillet, let it cool for a minute, then slice in half and serve warm.
Notes
- For a creamier texture, try adding a tablespoon of cream cheese to the ricotta mixture.
- For a spicy kick, add a pinch of red pepper flakes to the filling.
