Description

A delicious grilled cheese sandwich filled with ricotta cheese, fresh spinach, and sun-dried tomatoes, perfect for a quick meal.


Ingredients

  • 2 slices of sourdough bread
  • 2 tablespoons unsalted butter, softened
  • 1/4 cup ricotta cheese
  • 1/4 cup fresh spinach, chopped
  • 1/4 cup sun-dried tomatoes, chopped (packed in oil, drained)
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup shredded mozzarella cheese

Instructions

  1. Heat a skillet over medium heat.
  2. In a small bowl, mix together the ricotta cheese, chopped spinach, sun-dried tomatoes, garlic powder, salt, and black pepper until well combined.
  3. Spread 1 tablespoon of softened butter on one side of each slice of sourdough bread.
  4. Place one slice of bread, buttered side down, in the skillet.
  5. Spread the ricotta mixture evenly over the bread in the skillet.
  6. Sprinkle the shredded mozzarella cheese on top of the ricotta mixture.
  7. Top with the second slice of bread, buttered side up.
  8. Cook for about 3-4 minutes until the bottom is golden brown, then carefully flip the sandwich and cook for another 3-4 minutes until the other side is golden and the cheese is melted.
  9. Remove from the skillet, let it cool for a minute, then slice in half and serve warm.

Notes

  • For a creamier texture, try adding a tablespoon of cream cheese to the ricotta mixture.
  • For a spicy kick, add a pinch of red pepper flakes to the filling.
