- 8 ounces pasta (spaghetti or penne)
- 1 cup sun-dried tomatoes in oil, drained and roughly chopped
- 3 cloves garlic, minced
- 1/2 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1/4 teaspoon red pepper flakes (optional)
- Salt and pepper to taste
- 2 tablespoons olive oil
- Fresh basil leaves for garnish
Instructions
- Cook the pasta according to package instructions in a large pot of salted boiling water until al dente. Reserve 1/2 cup of pasta water, then drain the pasta and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and red pepper flakes (if using) and sauté for about 1 minute until fragrant, being careful not to burn the garlic.
- Add the chopped sun-dried tomatoes to the skillet and cook for another 2-3 minutes, stirring occasionally.
- Pour in the heavy cream and bring to a gentle simmer. Stir in the grated Parmesan cheese until melted and the sauce is creamy. If the sauce is too thick, add a little reserved pasta water to reach desired consistency.
- Add the cooked pasta to the skillet and toss to coat in the sauce. Season with salt and pepper to taste.
- Serve immediately, garnished with fresh basil leaves and additional Parmesan cheese if desired.
Notes
- For a protein boost, add grilled chicken or shrimp to the pasta.
- Substitute the heavy cream with a plant-based cream for a dairy-free version.
