Description

A creamy and flavorful pasta dish featuring sun-dried tomatoes, garlic, and Parmesan cheese, perfect for a quick and satisfying meal.


Ingredients

  • 8 ounces pasta (spaghetti or penne)
  • 1 cup sun-dried tomatoes in oil, drained and roughly chopped
  • 3 cloves garlic, minced
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh basil leaves for garnish

Instructions

  1. Cook the pasta according to package instructions in a large pot of salted boiling water until al dente. Reserve 1/2 cup of pasta water, then drain the pasta and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and red pepper flakes (if using) and sauté for about 1 minute until fragrant, being careful not to burn the garlic.
  3. Add the chopped sun-dried tomatoes to the skillet and cook for another 2-3 minutes, stirring occasionally.
  4. Pour in the heavy cream and bring to a gentle simmer. Stir in the grated Parmesan cheese until melted and the sauce is creamy. If the sauce is too thick, add a little reserved pasta water to reach desired consistency.
  5. Add the cooked pasta to the skillet and toss to coat in the sauce. Season with salt and pepper to taste.
  6. Serve immediately, garnished with fresh basil leaves and additional Parmesan cheese if desired.

  • For a protein boost, add grilled chicken or shrimp to the pasta.
  • Substitute the heavy cream with a plant-based cream for a dairy-free version.
