Description

Stuffed Salmon Pinwheels are a delicious and elegant dish featuring salmon fillets rolled with a creamy filling of spinach, sun-dried tomatoes, and feta cheese.


Ingredients

  • 2 (6-ounce) salmon fillets, skinless
  • 4 ounces cream cheese, softened
  • 1/4 cup fresh spinach, chopped
  • 1/4 cup sun-dried tomatoes, chopped
  • 1/4 cup feta cheese, crumbled
  • 1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)
  • 1 tablespoon lemon juice
  • Salt and pepper, to taste
  • 1 tablespoon olive oil

Instructions

  1. Preheat your oven to 375°F.
  2. Place the salmon fillets on a cutting board, skin side down. Gently pound them to an even thickness using a meat mallet or rolling pin.
  3. In a medium bowl, combine the cream cheese, spinach, sun-dried tomatoes, feta cheese, dill, lemon juice, salt, and pepper. Mix until well combined.
  4. Spread the cream cheese mixture evenly over each salmon fillet.
  5. Starting from one end, carefully roll each fillet tightly into a pinwheel shape. Secure with toothpicks if necessary.
  6. Heat olive oil in a large oven-safe skillet over medium heat. Add the salmon pinwheels and sear for 2-3 minutes on each side until golden brown.
  7. Transfer the skillet to the preheated oven and bake for 10-12 minutes, or until the salmon is cooked through and flakes easily with a fork.
  8. Remove from the oven, let rest for a few minutes, and then slice into pinwheels. Serve warm.

  • For a spicy kick, add a teaspoon of red pepper flakes to the cream cheese mixture.
