- 2 (6-ounce) salmon fillets, skinless
- 4 ounces cream cheese, softened
- 1/4 cup fresh spinach, chopped
- 1/4 cup sun-dried tomatoes, chopped
- 1/4 cup feta cheese, crumbled
- 1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)
- 1 tablespoon lemon juice
- Salt and pepper, to taste
- 1 tablespoon olive oil
Instructions
- Preheat your oven to 375°F.
- Place the salmon fillets on a cutting board, skin side down. Gently pound them to an even thickness using a meat mallet or rolling pin.
- In a medium bowl, combine the cream cheese, spinach, sun-dried tomatoes, feta cheese, dill, lemon juice, salt, and pepper. Mix until well combined.
- Spread the cream cheese mixture evenly over each salmon fillet.
- Starting from one end, carefully roll each fillet tightly into a pinwheel shape. Secure with toothpicks if necessary.
- Heat olive oil in a large oven-safe skillet over medium heat. Add the salmon pinwheels and sear for 2-3 minutes on each side until golden brown.
- Transfer the skillet to the preheated oven and bake for 10-12 minutes, or until the salmon is cooked through and flakes easily with a fork.
- Remove from the oven, let rest for a few minutes, and then slice into pinwheels. Serve warm.
Notes
- For a spicy kick, add a teaspoon of red pepper flakes to the cream cheese mixture.
- Substitute the spinach with arugula or kale for a different flavor profile.
