- 4 salmon fillets (6 ounces each)
- 1 cup fresh spinach, chopped
- 1/2 cup cream cheese, softened
- 1/4 cup grated Parmesan cheese
- 1/4 cup breadcrumbs
- 2 cloves garlic, minced
- 1 tablespoon lemon juice
- 1 teaspoon dried dill
- Salt and pepper to taste
- Olive oil spray
Instructions
- In a mixing bowl, combine the chopped spinach, cream cheese, Parmesan cheese, breadcrumbs, minced garlic, lemon juice, dill, salt, and pepper. Mix until well combined.
- Preheat the air fryer to 400°F.
- Carefully cut a pocket in each salmon fillet by slicing horizontally, being careful not to cut all the way through.
- Stuff each salmon fillet with the spinach and cream cheese mixture, pressing gently to ensure the filling stays inside.
- Lightly spray the air fryer basket with olive oil to prevent sticking.
- Place the stuffed salmon fillets in the air fryer basket, ensuring they are not overcrowded.
- Cook the salmon for 10-12 minutes, or until the salmon is cooked through and flakes easily with a fork.
- Remove the salmon from the air fryer and let it rest for a couple of minutes before serving.
Notes
- For added flavor, consider mixing in some chopped sun-dried tomatoes or artichokes into the stuffing.
- If you prefer a crispy topping, sprinkle additional breadcrumbs mixed with a little olive oil on top of the stuffed salmon before air frying.
