- 2 large sweet potatoes
- 1 cup cooked chicken, shredded
- 1 cup corn kernels (fresh, frozen, or canned)
- 1/2 cup diced red onion
- 1/2 cup crumbled feta cheese
- 1/4 cup mayonnaise
- 2 tablespoons lime juice
- 1 teaspoon chili powder
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- Fresh cilantro, chopped (for garnish)
- Lime wedges (for serving)
Instructions
- Preheat the oven to 400°F.
- Wash and pierce the sweet potatoes with a fork. Place them on a baking sheet and bake for 45-60 minutes, or until tender.
- In a large bowl, combine the shredded chicken, corn, red onion, feta cheese, mayonnaise, lime juice, chili powder, garlic powder, salt, and pepper. Mix well until all ingredients are evenly coated.
- Once the sweet potatoes are done, remove them from the oven and let them cool slightly. Cut them in half lengthwise and scoop out a small portion of the flesh to create a well for the filling.
- Fill each sweet potato half with the chicken and corn mixture.
- Return the stuffed sweet potatoes to the oven and bake for an additional 10-15 minutes, until heated through.
- Garnish with fresh cilantro and serve with lime wedges on the side.
