Description

Street Corn Chicken Stuffed Sweet Potatoes are a delicious and hearty dish that combines sweet potatoes with a flavorful chicken and corn filling, topped with feta cheese and fresh cilantro.


Ingredients

  • 2 large sweet potatoes
  • 1 cup cooked chicken, shredded
  • 1 cup corn kernels (fresh, frozen, or canned)
  • 1/2 cup diced red onion
  • 1/2 cup crumbled feta cheese
  • 1/4 cup mayonnaise
  • 2 tablespoons lime juice
  • 1 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • Fresh cilantro, chopped (for garnish)
  • Lime wedges (for serving)

Instructions

  1. Preheat the oven to 400°F.
  2. Wash and pierce the sweet potatoes with a fork. Place them on a baking sheet and bake for 45-60 minutes, or until tender.
  3. In a large bowl, combine the shredded chicken, corn, red onion, feta cheese, mayonnaise, lime juice, chili powder, garlic powder, salt, and pepper. Mix well until all ingredients are evenly coated.
  4. Once the sweet potatoes are done, remove them from the oven and let them cool slightly. Cut them in half lengthwise and scoop out a small portion of the flesh to create a well for the filling.
  5. Fill each sweet potato half with the chicken and corn mixture.
  6. Return the stuffed sweet potatoes to the oven and bake for an additional 10-15 minutes, until heated through.
  7. Garnish with fresh cilantro and serve with lime wedges on the side.
