- 1 cup heavy cream
- 1 cup mascarpone cheese
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup brewed coffee, cooled
- 1 tablespoon coffee liqueur (optional)
- 24 ladyfinger cookies
- Cocoa powder, for dusting
Instructions
- In a medium bowl, combine the sliced strawberries with 2 tablespoons of powdered sugar. Toss gently and let them sit for about 15 minutes to release their juices.
- In a separate large bowl, whip the heavy cream until soft peaks form. Gradually add the remaining powdered sugar and vanilla extract, continuing to whip until stiff peaks form.
- Gently fold the mascarpone cheese into the whipped cream until well combined and smooth.
- In a shallow dish, mix the brewed coffee with the coffee liqueur, if using. Quickly dip each ladyfinger into the coffee mixture, ensuring they are soaked but not soggy.
- In a 9×9-inch dish, layer half of the soaked ladyfingers on the bottom. Spread half of the mascarpone mixture over the ladyfingers, followed by half of the macerated strawberries.
- Repeat the layers with the remaining ladyfingers, mascarpone mixture, and strawberries.
- Cover and refrigerate for at least 4 hours, preferably overnight, to allow the flavors to meld.
- Before serving, dust the top with cocoa powder and garnish with additional fresh strawberries if desired.
