- 2 cups crushed graham crackers
- 1/2 cup melted unsalted butter
- 1/4 cup sugar
- 4 (8-ounce) packages softened cream cheese
- 1 cup sugar
- 1 teaspoon vanilla extract
- 4 large eggs
- 1 cup sour cream
- 1 cup fresh strawberries, hulled and sliced
- 1/4 cup confectioners’ sugar
Instructions
- Preheat your oven to 325°F and grease a 9-inch springform pan.
- In a mixing bowl, blend the crushed graham crackers, melted butter, and 1/4 cup of sugar until the mixture resembles wet sand. Press this mixture into the bottom of the prepared springform pan to create a crust.
- Bake the crust for 10 minutes, then take it out and allow it to cool completely.
- In a large bowl, use an electric mixer to beat the softened cream cheese with 1 cup of sugar and vanilla extract until smooth and creamy.
- Add the eggs one at a time, ensuring each is fully incorporated before adding the next. Mix in the sour cream until well combined.
- In a blender, puree the fresh strawberries with the confectioners’ sugar until smooth. Set aside a few tablespoons of this strawberry puree for later use.
- Pour half of the cheesecake mixture over the cooled crust. Drizzle some of the strawberry puree on top and use a knife to create swirls through the batter.
- Add the remaining cheesecake mixture and repeat the swirling with the leftover strawberry puree.
- Bake the cheesecake for 55-60 minutes, or until the center is set but still has a slight jiggle.
- Turn off the oven and leave the door ajar, letting the cheesecake cool inside for an hour.
- Allow it to reach room temperature before placing it in the refrigerator for at least 4 hours, or overnight.
- Once chilled, carefully remove the sides of the springform pan and drizzle the reserved strawberry puree on top before serving.
