Ingredients

  • 2 cups crushed graham crackers
  • 1/2 cup melted unsalted butter
  • 1/4 cup sugar
  • 4 (8-ounce) packages softened cream cheese
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 4 large eggs
  • 1 cup sour cream
  • 1 cup fresh strawberries, hulled and sliced
  • 1/4 cup confectioners’ sugar

Instructions

  1. Preheat your oven to 325°F and grease a 9-inch springform pan.
  2. In a mixing bowl, blend the crushed graham crackers, melted butter, and 1/4 cup of sugar until the mixture resembles wet sand. Press this mixture into the bottom of the prepared springform pan to create a crust.
  3. Bake the crust for 10 minutes, then take it out and allow it to cool completely.
  4. In a large bowl, use an electric mixer to beat the softened cream cheese with 1 cup of sugar and vanilla extract until smooth and creamy.
  5. Add the eggs one at a time, ensuring each is fully incorporated before adding the next. Mix in the sour cream until well combined.
  6. In a blender, puree the fresh strawberries with the confectioners’ sugar until smooth. Set aside a few tablespoons of this strawberry puree for later use.
  7. Pour half of the cheesecake mixture over the cooled crust. Drizzle some of the strawberry puree on top and use a knife to create swirls through the batter.
  8. Add the remaining cheesecake mixture and repeat the swirling with the leftover strawberry puree.
  9. Bake the cheesecake for 55-60 minutes, or until the center is set but still has a slight jiggle.
  10. Turn off the oven and leave the door ajar, letting the cheesecake cool inside for an hour.
  11. Allow it to reach room temperature before placing it in the refrigerator for at least 4 hours, or overnight.
  12. Once chilled, carefully remove the sides of the springform pan and drizzle the reserved strawberry puree on top before serving.
