Description

A delicious and light Strawberry Shortcake Layer Cake perfect for any occasion.


Ingredients

  • 2 cups all-purpose flour
  • 1 ½ cups granulated sugar
  • ½ cup unsalted butter, softened
  • 1 cup whole milk
  • 3 ½ teaspoons baking powder
  • 1 teaspoon vanilla extract
  • ½ teaspoon salt
  • 4 large eggs
  • 2 cups fresh strawberries, hulled and sliced
  • 1 cup heavy whipping cream
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract (for whipped cream)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  4. In another bowl, whisk together the flour, baking powder, and salt. Gradually add this dry mixture to the wet ingredients, alternating with the milk. Mix until just combined.
  5. Divide the batter evenly between the prepared cake pans. Smooth the tops with a spatula.
  6. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  7. Allow the cakes to cool in the pans for 10 minutes, then turn them out onto wire racks to cool completely.
  8. While the cakes are cooling, prepare the whipped cream. In a mixing bowl, beat the heavy whipping cream, powdered sugar, and vanilla extract until soft peaks form.
  9. Once the cakes are completely cool, place one layer on a serving plate. Spread a layer of whipped cream over the top and add half of the sliced strawberries.
  10. Place the second cake layer on top and repeat the process with the remaining whipped cream and strawberries.
  11. Decorate the top with any remaining strawberries and a dollop of whipped cream if desired.

Notes

  • For a lighter version, substitute half of the heavy cream with Greek yogurt.
  • You can also add a layer of lemon curd between the cake layers for a zesty twist.
