- 1 ½ cups all-purpose flour
- ½ cup unsalted butter, chilled and diced
- ¼ cup granulated sugar
- 1 large egg yolk
- 2–4 tablespoons cold water
- 1 cup whole milk
- ½ cup granulated sugar
- 2 tablespoons cornstarch
- 3 large egg yolks
- 1 teaspoon vanilla extract
- 1 tablespoon unsalted butter
- 1 cup fresh strawberries, hulled and sliced
- 1 tablespoon rose water
- Fresh mint leaves for garnish (optional)
Instructions
- Preheat the oven to 350°F.
- In a mixing bowl, combine the flour and sugar. Add the diced butter and mix until the mixture resembles coarse crumbs.
- Stir in the egg yolk and enough cold water to form a dough. Wrap in plastic wrap and chill for 30 minutes.
- Roll out the chilled dough on a floured surface to fit a 9-inch tart pan. Press the dough into the pan and trim the edges.
- Prick the bottom with a fork and bake for 20 minutes or until golden brown. Let cool.
- In a saucepan, heat the milk over medium heat until just simmering.
- In a separate bowl, whisk together the sugar, cornstarch, and egg yolks. Gradually add the hot milk to the egg mixture, whisking constantly.
- Return the mixture to the saucepan and cook over medium heat, stirring until thickened. Remove from heat and stir in the vanilla and butter. Let cool slightly.
- Once the tart shell is cool, spread the custard cream evenly over the bottom.
- Arrange the sliced strawberries on top and drizzle with rose water.
- Chill the tart in the refrigerator for at least 1 hour before serving.
Notes
- For a richer flavor, consider adding a teaspoon of almond extract to the custard.
- You can substitute the strawberries with other berries like raspberries or blueberries for a different twist.
