Delicious Strawberry Rhubarb Crumb Bars that combine the tartness of rhubarb with the sweetness of strawberries, topped with a crumbly oat mixture.

- 2 cups fresh strawberries, hulled and sliced
- 2 cups rhubarb, chopped
- 1 cup granulated sugar, divided
- 2 tablespoons cornstarch
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1 cup rolled oats
- 1/2 cup brown sugar, packed
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, melted
Instructions
- Preheat the oven to 350°F (175°C). Grease a 9×9-inch baking pan or line it with parchment paper.
- In a medium bowl, combine the strawberries, rhubarb, 1/2 cup of granulated sugar, cornstarch, lemon juice, and vanilla extract. Stir until well combined and set aside.
- In another bowl, mix together the flour, oats, brown sugar, baking powder, salt, and the remaining 1/2 cup of granulated sugar. Pour in the melted butter and stir until the mixture resembles coarse crumbs.
- Press half of the crumb mixture into the bottom of the prepared baking pan to form a crust.
- Spread the strawberry-rhubarb mixture evenly over the crust.
- Sprinkle the remaining crumb mixture on top of the fruit layer.
- Bake in the preheated oven for 35-40 minutes, or until the top is golden brown and the filling is bubbly.
- Remove from the oven and let cool completely in the pan on a wire rack.
- Once cooled, cut into bars and serve.
Notes
- For a twist, try adding a teaspoon of cinnamon to the crumb mixture for extra flavor.
- You can substitute the strawberries and rhubarb with other fruits like blueberries and peaches for a different taste.
