Description

Delicious Strawberry Rhubarb Crumb Bars that combine the tartness of rhubarb with the sweetness of strawberries, topped with a crumbly oat mixture.


Ingredients

  • 2 cups fresh strawberries, hulled and sliced
  • 2 cups rhubarb, chopped
  • 1 cup granulated sugar, divided
  • 2 tablespoons cornstarch
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 cup rolled oats
  • 1/2 cup brown sugar, packed
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, melted

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×9-inch baking pan or line it with parchment paper.
  2. In a medium bowl, combine the strawberries, rhubarb, 1/2 cup of granulated sugar, cornstarch, lemon juice, and vanilla extract. Stir until well combined and set aside.
  3. In another bowl, mix together the flour, oats, brown sugar, baking powder, salt, and the remaining 1/2 cup of granulated sugar. Pour in the melted butter and stir until the mixture resembles coarse crumbs.
  4. Press half of the crumb mixture into the bottom of the prepared baking pan to form a crust.
  5. Spread the strawberry-rhubarb mixture evenly over the crust.
  6. Sprinkle the remaining crumb mixture on top of the fruit layer.
  7. Bake in the preheated oven for 35-40 minutes, or until the top is golden brown and the filling is bubbly.
  8. Remove from the oven and let cool completely in the pan on a wire rack.
  9. Once cooled, cut into bars and serve.

Notes

  • For a twist, try adding a teaspoon of cinnamon to the crumb mixture for extra flavor.
  • You can substitute the strawberries and rhubarb with other fruits like blueberries and peaches for a different taste.
