Delicious and fruity Strawberry Lemon Blondies that are easy to make and perfect for any occasion.

- 1 cup unsalted butter, melted
- 1 cup brown sugar, packed
- 1/2 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 tablespoon lemon zest
- 1/4 cup fresh lemon juice
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup fresh strawberries, hulled and chopped
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×9-inch baking pan or line it with parchment paper.
- In a large mixing bowl, combine the melted butter, brown sugar, and granulated sugar. Whisk until smooth.
- Add the eggs, vanilla extract, lemon zest, and lemon juice, mixing until well combined.
- In a separate bowl, whisk together the flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
- Gently fold in the chopped strawberries.
- Pour the batter into the prepared baking pan and spread it evenly.
- Bake for 25-30 minutes or until the edges are golden and a toothpick inserted into the center comes out clean.
- Allow to cool in the pan for about 10 minutes before transferring to a wire rack to cool completely.
- Cut into squares and serve.
Notes
- For a richer flavor, try adding 1/2 cup of white chocolate chips to the batter.
- You can also substitute the strawberries with blueberries or raspberries for a different fruity twist.
