A delicious and decadent Strawberry Earthquake Cake that combines chocolate cake with fresh strawberries and a creamy filling.

- 2 cups fresh strawberries, hulled and sliced
- 1 box (15.25 oz) chocolate cake mix
- 1 cup water
- 1/2 cup vegetable oil
- 3 large eggs
- 8 oz cream cheese, softened
- 1/2 cup powdered sugar
- 1/2 cup shredded coconut
- 1/2 cup chopped walnuts or pecans
- 1/2 cup chocolate chips
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking pan.
- In a large bowl, combine the chocolate cake mix, water, vegetable oil, and eggs. Mix until well combined and smooth.
- Pour half of the cake batter into the prepared baking pan.
- Evenly distribute the sliced strawberries over the batter.
- In a separate bowl, beat the softened cream cheese and powdered sugar together until smooth. Drop spoonfuls of the cream cheese mixture over the strawberries.
- Pour the remaining cake batter over the cream cheese layer.
- Sprinkle the shredded coconut, chopped nuts, and chocolate chips evenly on top.
- Bake in the preheated oven for 40-45 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the cake to cool in the pan for at least 15 minutes before serving.
Notes
- For a lighter version, substitute the chocolate cake mix with a sugar-free or gluten-free cake mix.
- Add a drizzle of chocolate or strawberry syrup on top before serving for extra flavor and presentation.
