A delicious and decadent Strawberry Earthquake Cake that combines chocolate cake with fresh strawberries and a creamy filling.


Ingredients

  • 2 cups fresh strawberries, hulled and sliced
  • 1 box (15.25 oz) chocolate cake mix
  • 1 cup water
  • 1/2 cup vegetable oil
  • 3 large eggs
  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1/2 cup shredded coconut
  • 1/2 cup chopped walnuts or pecans
  • 1/2 cup chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking pan.
  2. In a large bowl, combine the chocolate cake mix, water, vegetable oil, and eggs. Mix until well combined and smooth.
  3. Pour half of the cake batter into the prepared baking pan.
  4. Evenly distribute the sliced strawberries over the batter.
  5. In a separate bowl, beat the softened cream cheese and powdered sugar together until smooth. Drop spoonfuls of the cream cheese mixture over the strawberries.
  6. Pour the remaining cake batter over the cream cheese layer.
  7. Sprinkle the shredded coconut, chopped nuts, and chocolate chips evenly on top.
  8. Bake in the preheated oven for 40-45 minutes, or until a toothpick inserted into the center comes out clean.
  9. Allow the cake to cool in the pan for at least 15 minutes before serving.
