Description

A delightful and creamy Strawberry Crunch Cheese Cake topped with fresh strawberries and a crunchy cereal layer.

Ingredients

Scale
  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 1 cup granulated sugar, divided
  • 2 (8-ounce) packages cream cheese, softened
  • 1 teaspoon vanilla extract
  • 1 cup heavy whipping cream
  • 1 cup fresh strawberries, hulled and sliced
  • 1 cup strawberry-flavored cereal (like Strawberry Crunch or similar)

Instructions

  1. Preheat the oven to 325°F (163°C).
  2. In a medium bowl, combine graham cracker crumbs and melted butter. Mix until well combined. Press the mixture firmly into the bottom of a 9-inch springform pan to form the crust. Bake for 10 minutes, then remove from the oven and let cool.
  3. In a large mixing bowl, beat the softened cream cheese with ½ cup of granulated sugar and vanilla extract until smooth and creamy.
  4. In a separate bowl, whip the heavy cream until soft peaks form. Gradually add the remaining ½ cup of sugar and continue whipping until stiff peaks form.
  5. Gently fold the whipped cream into the cream cheese mixture until fully combined.
  6. Pour the cream cheese mixture over the cooled crust in the springform pan, smoothing the top with a spatula.
  7. Arrange the sliced strawberries evenly over the top of the cheesecake mixture.
  8. Sprinkle the strawberry cereal on top of the strawberries for added crunch.
  9. Cover the cheesecake with plastic wrap and refrigerate for at least 4 hours, or overnight for best results.
  10. Once set, carefully remove the sides of the springform pan and slice the cheesecake into wedges to serve.

Notes

  • For a chocolate twist, drizzle melted chocolate over the top before serving.
  • Substitute fresh strawberries with other berries like blueberries or raspberries for a mixed berry crunch cheesecake.
