Description

Strawberry Cracker Pudding is a delightful summer treat that combines fresh strawberries with a creamy milk mixture and layers of graham crackers.

Ingredients

Scale
  • 2 cups fresh strawberries, hulled and sliced
  • 1 cup heavy cream
  • 1 cup whole milk
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 cup crushed graham crackers
  • 1/4 cup unsweetened cocoa powder (optional for chocolate flavor)
  • Whipped cream for topping (optional)

Instructions

  1. In a medium bowl, combine the sliced strawberries with 2 tablespoons of sugar. Toss gently and let sit for about 15 minutes to release their juices.
  2. In a separate large bowl, whisk together the heavy cream, whole milk, remaining sugar, vanilla extract, and salt until well combined.
  3. If using cocoa powder for a chocolate flavor, sift it into the milk mixture and whisk until smooth.
  4. In a 9×9-inch baking dish, layer half of the crushed graham crackers on the bottom.
  5. Pour half of the milk mixture over the graham crackers, followed by half of the strawberries.
  6. Repeat the layers with the remaining graham crackers, milk mixture, and strawberries.
  7. Cover the dish with plastic wrap and refrigerate for at least 4 hours or overnight to allow the flavors to meld and the pudding to set.
  8. Before serving, top with whipped cream if desired.

Notes

  • For added texture, consider mixing in some chopped nuts or shredded coconut between the layers.
  • Substitute the strawberries with other berries like blueberries or raspberries for a different flavor profile.
