Strawberry Cheesecake Rolls are a delightful dessert that combines the flavors of fresh strawberries and creamy cheesecake wrapped in a crispy tortilla.


Ingredients

  • 1 cup fresh strawberries, hulled and sliced
  • 2 tablespoons granulated sugar
  • 1 teaspoon lemon juice
  • 1 (8-ounce) package cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 4 large flour tortillas
  • 1/4 cup butter, melted
  • 1/2 cup graham cracker crumbs
  • Whipped cream, for serving (optional)

Instructions

  1. In a medium bowl, combine the sliced strawberries, granulated sugar, and lemon juice. Toss to coat and let sit for about 10 minutes to release the juices.
  2. In another bowl, mix the softened cream cheese, powdered sugar, vanilla extract, and cinnamon until smooth and creamy.
  3. Lay a tortilla flat on a clean surface. Spread a generous layer of the cream cheese mixture over the entire tortilla.
  4. Spoon some of the strawberry mixture onto the cream cheese layer, spreading it evenly.
  5. Roll the tortilla tightly from one end to the other, creating a log shape. Repeat with the remaining tortillas.
  6. Preheat your oven to 350°F. Brush the outside of each rolled tortilla with melted butter and then roll them in graham cracker crumbs until coated.
  7. Place the rolls seam-side down on a baking sheet lined with parchment paper. Bake for 15-20 minutes, or until golden brown and crispy.
  8. Allow to cool slightly before slicing into pinwheels. Serve warm with whipped cream, if desired.

Notes

  • For a chocolate twist, add a tablespoon of cocoa powder to the cream cheese mixture and use chocolate graham cracker crumbs.
  • Substitute blueberries or raspberries for the strawberries for a different flavor profile.
