Strawberry Cheesecake Rolls are a delightful dessert that combines the flavors of fresh strawberries and creamy cheesecake wrapped in a crispy tortilla.

- 1 cup fresh strawberries, hulled and sliced
- 2 tablespoons granulated sugar
- 1 teaspoon lemon juice
- 1 (8-ounce) package cream cheese, softened
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 1/2 teaspoon cinnamon
- 4 large flour tortillas
- 1/4 cup butter, melted
- 1/2 cup graham cracker crumbs
- Whipped cream, for serving (optional)
Instructions
- In a medium bowl, combine the sliced strawberries, granulated sugar, and lemon juice. Toss to coat and let sit for about 10 minutes to release the juices.
- In another bowl, mix the softened cream cheese, powdered sugar, vanilla extract, and cinnamon until smooth and creamy.
- Lay a tortilla flat on a clean surface. Spread a generous layer of the cream cheese mixture over the entire tortilla.
- Spoon some of the strawberry mixture onto the cream cheese layer, spreading it evenly.
- Roll the tortilla tightly from one end to the other, creating a log shape. Repeat with the remaining tortillas.
- Preheat your oven to 350°F. Brush the outside of each rolled tortilla with melted butter and then roll them in graham cracker crumbs until coated.
- Place the rolls seam-side down on a baking sheet lined with parchment paper. Bake for 15-20 minutes, or until golden brown and crispy.
- Allow to cool slightly before slicing into pinwheels. Serve warm with whipped cream, if desired.
Notes
- For a chocolate twist, add a tablespoon of cocoa powder to the cream cheese mixture and use chocolate graham cracker crumbs.
- Substitute blueberries or raspberries for the strawberries for a different flavor profile.
