Description

A refreshing and colorful Spring Jello Salad made with strawberry-flavored gelatin, fresh strawberries, mini marshmallows, and whipped topping, perfect for spring gatherings.

Ingredients

Scale
  • 1 package (3 oz) strawberry-flavored gelatin
  • 1 cup boiling water
  • 1 cup cold water
  • 1 cup diced fresh strawberries
  • 1 cup mini marshmallows
  • 1 cup whipped topping (like Cool Whip)
  • 1/2 cup chopped pecans (optional)

Instructions

  1. In a mixing bowl, dissolve the strawberry gelatin in boiling water, stirring until completely dissolved.
  2. Add the cold water to the gelatin mixture and stir well.
  3. Refrigerate the mixture for about 30 minutes, or until it starts to thicken but is not fully set.
  4. Gently fold in the diced strawberries, mini marshmallows, whipped topping, and chopped pecans (if using) until well combined.
  5. Pour the mixture into a 9-inch round or square dish and spread evenly.
  6. Cover and refrigerate for at least 2 hours, or until fully set.
  7. Serve chilled, cutting into squares or wedges.

Notes

  • For a tropical twist, substitute the strawberry gelatin with pineapple or orange gelatin and add diced pineapple instead of strawberries.
  • To make it a bit healthier, use sugar-free gelatin and light whipped topping.
