Ingredients

  • 8 ounces of pasta (penne or fettuccine)
  • 2 tablespoons olive oil
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 8 ounces mushrooms, sliced
  • 4 cups fresh spinach
  • 1 teaspoon dried oregano
  • 1/2 teaspoon red pepper flakes (optional)
  • Salt and pepper to taste
  • 1/2 cup grated Parmesan cheese
  • Fresh basil for garnish (optional)

Instructions

  1. Cook the pasta according to package instructions in a large pot of salted boiling water until al dente. Drain and set aside, reserving 1/2 cup of the pasta water.
  2. In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes until translucent.
  3. Stir in the minced garlic and sliced mushrooms. Cook for another 5-7 minutes until the mushrooms are tender and browned.
  4. Add the fresh spinach, oregano, red pepper flakes (if using), salt, and pepper to the skillet. Cook until the spinach is wilted, about 2-3 minutes.
  5. Toss the cooked pasta into the skillet with the mushroom and spinach mixture. Add the reserved pasta water a little at a time until the desired consistency is reached.
  6. Stir in the grated Parmesan cheese until melted and well combined. Adjust seasoning if necessary.
  7. Serve immediately, garnished with fresh basil if desired.
