Ingredients

  • 2 large boneless, skinless chicken breasts (about 1 pound total)
  • 1 cup fresh spinach, chopped
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup cream cheese, softened
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • Salt and pepper, to taste
  • 1 tablespoon olive oil
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon paprika
  • 1/4 cup breadcrumbs (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, combine the chopped spinach, feta cheese, cream cheese, garlic powder, onion powder, salt, and pepper. Mix well until all ingredients are combined.
  3. Place the chicken breasts between two sheets of plastic wrap or parchment paper. Gently pound them with a meat mallet or rolling pin until they are about 1/2 inch thick.
  4. Season both sides of the chicken breasts with salt, pepper, oregano, and paprika.
  5. Spoon an equal amount of the spinach and feta mixture onto each chicken breast, spreading it evenly.
  6. Carefully roll each chicken breast tightly, starting from the end with the filling. Secure the rolls with toothpicks or kitchen twine.
  7. In a large oven-safe skillet, heat the olive oil over medium-high heat. Once hot, add the chicken rolls and sear them for about 3-4 minutes on each side until golden brown.
  8. If using breadcrumbs, sprinkle them over the top of the chicken rolls.
  9. Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
  10. Remove from the oven, let rest for 5 minutes, then remove toothpicks or twine before slicing and serving.

Notes

  • For a spicy kick, add a pinch of red pepper flakes to the spinach and feta mixture.
  • Substitute the spinach with kale or Swiss chard for a different flavor profile.
