- 2 large boneless, skinless chicken breasts (about 1 pound total)
- 1 cup fresh spinach, chopped
- 1/2 cup feta cheese, crumbled
- 1/4 cup cream cheese, softened
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- Salt and pepper, to taste
- 1 tablespoon olive oil
- 1/2 teaspoon dried oregano
- 1/2 teaspoon paprika
- 1/4 cup breadcrumbs (optional)
Instructions
- Preheat your oven to 375°F (190°C).
- In a mixing bowl, combine the chopped spinach, feta cheese, cream cheese, garlic powder, onion powder, salt, and pepper. Mix well until all ingredients are combined.
- Place the chicken breasts between two sheets of plastic wrap or parchment paper. Gently pound them with a meat mallet or rolling pin until they are about 1/2 inch thick.
- Season both sides of the chicken breasts with salt, pepper, oregano, and paprika.
- Spoon an equal amount of the spinach and feta mixture onto each chicken breast, spreading it evenly.
- Carefully roll each chicken breast tightly, starting from the end with the filling. Secure the rolls with toothpicks or kitchen twine.
- In a large oven-safe skillet, heat the olive oil over medium-high heat. Once hot, add the chicken rolls and sear them for about 3-4 minutes on each side until golden brown.
- If using breadcrumbs, sprinkle them over the top of the chicken rolls.
- Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
- Remove from the oven, let rest for 5 minutes, then remove toothpicks or twine before slicing and serving.
Notes
- For a spicy kick, add a pinch of red pepper flakes to the spinach and feta mixture.
- Substitute the spinach with kale or Swiss chard for a different flavor profile.
