- 4 large eggs
- 1 cup fresh spinach, chopped
- 1/2 cup shredded cheddar cheese
- 1/4 cup milk
- 1 tablespoon butter
- Salt and pepper to taste
Instructions
- In a mixing bowl, whisk together the eggs, milk, salt, and pepper until well combined and slightly frothy.
- Heat a non-stick skillet over medium heat and add the butter. Allow it to melt and coat the bottom of the skillet.
- Add the chopped spinach to the skillet and sauté for about 1-2 minutes until wilted.
- Pour the egg mixture over the spinach in the skillet. Cook for 2-3 minutes, gently lifting the edges with a spatula to allow uncooked egg to flow underneath.
- Once the eggs are mostly set but still slightly runny on top, sprinkle the shredded cheddar cheese evenly over one half of the omelette.
- Carefully fold the other half of the omelette over the cheese and cook for an additional 1-2 minutes until the cheese is melted and the eggs are fully cooked.
- Slide the omelette onto a plate and serve immediately.
Notes
- For added flavor, consider mixing in diced tomatoes or bell peppers before cooking the eggs.
- For a healthier option, use egg whites instead of whole eggs and reduce the cheese for a lighter omelette.
