Instructions
- In a large bowl, combine the cubed watermelon, red onion, cilantro, and minced jalapeño.
- In a small bowl, whisk together the lime juice, olive oil, salt, black pepper, and chili powder (if using).
- Pour the dressing over the watermelon mixture and gently toss to combine.
- Let the salad sit for about 10 minutes to allow the flavors to meld.
- Serve chilled or at room temperature.
Notes
- For added crunch, consider mixing in 1/4 cup of toasted pumpkin seeds.
- If you prefer a sweeter salad, drizzle a little honey or agave syrup over the top before serving.
