Ingredients

  • 3 cups water
  • 1 package (3 oz) instant ramen noodles
  • 1 tablespoon gochujang (Korean chili paste)
  • 1 teaspoon soy sauce
  • 1 teaspoon sesame oil
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon ginger powder
  • 1/4 teaspoon black pepper
  • 1/2 cup sliced green onions
  • 1/2 cup sliced mushrooms
  • 1/2 cup baby spinach
  • 1 large egg (optional)
  • Sesame seeds for garnish (optional)

Instructions

  1. In a medium saucepan, bring 3 cups of water to a boil over medium-high heat.
  2. Add the instant ramen noodles to the boiling water and cook according to package instructions, usually about 3-4 minutes.
  3. While the noodles are cooking, in a small bowl, mix together the gochujang, soy sauce, sesame oil, garlic powder, ginger powder, and black pepper.
  4. Once the noodles are cooked, reduce the heat to medium and stir in the gochujang mixture.
  5. Add the sliced mushrooms and cook for an additional 2 minutes until they are tender.
  6. Stir in the baby spinach and sliced green onions, cooking for another minute until the spinach wilts.
  7. If using, crack the egg into the ramen and gently stir to combine. Cook for an additional minute until the egg is cooked to your liking.
  8. Serve hot, garnished with sesame seeds if desired.

Notes

  • For extra protein, add cooked chicken, tofu, or shrimp to the ramen.
  • Adjust the spice level by adding more or less gochujang, or include sliced jalapeños for an extra kick.
