Ingredients

  • 1 pound mahi mahi fillets
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon cayenne pepper (adjust for spice preference)
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 lime, juiced
  • Fresh cilantro, for garnish

Instructions

  1. Preheat your grill or a grill pan over medium-high heat.
  2. In a small bowl, mix together the garlic powder, onion powder, smoked paprika, cayenne pepper, thyme, salt, and black pepper.
  3. Pat the mahi mahi fillets dry with paper towels and brush both sides with olive oil.
  4. Sprinkle the spice mixture evenly over both sides of the fillets, pressing gently to adhere.
  5. Squeeze the lime juice over the seasoned fillets.
  6. Place the mahi mahi on the grill and cook for about 4-5 minutes on each side, or until the fish flakes easily with a fork and is opaque in the center.
  7. Remove from the grill and let rest for a couple of minutes.
  8. Garnish with fresh cilantro before serving.

Notes

  • For a tropical twist, serve the mahi mahi with a mango salsa made from diced mango, red onion, cilantro, and lime juice.
  • If you prefer baking, place the seasoned fillets on a lined baking sheet and bake at 400°F for 15-20 minutes, or until cooked through.
