Ingredients

- 1 small head green cabbage, finely shredded (about 6 cups)
- 2 medium carrots, grated
- 1 cup mayonnaise
- 2 tablespoons apple cider vinegar
- 2 tablespoons sugar
- 1 teaspoon Dijon mustard
- 1/2 teaspoon celery seed
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- In a large bowl, combine the shredded cabbage and grated carrots.
- In a separate bowl, whisk together the mayonnaise, apple cider vinegar, sugar, Dijon mustard, celery seed, salt, and black pepper until smooth.
- Pour the dressing over the cabbage and carrots, and toss until everything is well coated.
- Cover the bowl with plastic wrap and refrigerate for at least 1 hour to allow the flavors to meld.
- Before serving, give the coleslaw a good stir and adjust seasoning if needed.
Notes
- For a crunchier texture, add 1/2 cup of chopped green onions or 1/2 cup of diced bell peppers.
- Substitute Greek yogurt for half of the mayonnaise for a lighter version while maintaining creaminess.
