Instructions

  1. In a large bowl, mix the Coca-Cola, beef broth, Worcestershire sauce, soy sauce, black pepper, salt, paprika, onion powder, and garlic powder. Stir until well combined.
  2. Heat olive oil in a large skillet over medium-high heat. Sear the beef loin roast on all sides until browned, about 3-4 minutes per side.
  3. Place the sliced onions and minced garlic in the bottom of a roasting pan.
  4. Transfer the seared beef loin to the roasting pan on top of the onions and garlic.
  5. Pour the Coca-Cola mixture over the beef loin, ensuring it is well coated.
  6. Cover the roasting pan tightly with aluminum foil and place it in the preheated oven.
  7. Roast for 2 to 2.5 hours, or until the internal temperature reaches 145°F for medium-rare.
  8. Remove the roast from the oven and let it rest for 10-15 minutes before slicing.
