- 1 cup buttermilk
- 1 teaspoon hot sauce (optional)
- 1 cup all-purpose flour
- 1 cup cornmeal
- 1 teaspoon paprika

- 1 teaspoon onion powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon cayenne pepper (adjust for spice preference)
- Vegetable oil for frying
Instructions
- In a large bowl, combine the buttermilk and hot sauce (if using). Add the fish fillets, making sure they are fully submerged. Cover and refrigerate for at least 30 minutes to marinate.
- In a separate shallow dish, mix together the flour, cornmeal, paprika, garlic powder, onion powder, salt, black pepper, and cayenne pepper.
- Remove the fish from the buttermilk, allowing excess to drip off. Dredge each fillet in the flour mixture, ensuring an even coating. Shake off any excess.
- In a large skillet or deep fryer, heat about 1 inch of vegetable oil over medium-high heat until it reaches 350°F.
- Carefully add the coated fish fillets in batches, avoiding overcrowding the pan. Fry for 4-5 minutes on each side, or until golden brown and cooked through.
- Use a slotted spoon to transfer the fish to a paper towel-lined plate to drain excess oil.
- Serve hot with lemon wedges and your favorite dipping sauce.
