Description

Sorrentino Chicken is a delicious and flavorful dish featuring breaded chicken breasts topped with marinara sauce and fresh mozzarella cheese, baked to perfection.

Ingredients

Scale
  • 4 boneless, skinless chicken breasts (about 1.5 pounds total)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup all-purpose flour
  • 2 large eggs
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 cup marinara sauce
  • 4 ounces fresh mozzarella cheese, sliced
  • 1/4 cup fresh basil leaves, chopped
  • 2 tablespoons olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Season the chicken breasts with salt and pepper on both sides.
  3. Set up a breading station: place the flour in one shallow dish, beat the eggs in a second dish, and mix the breadcrumbs with the grated Parmesan cheese in a third dish.
  4. Dredge each chicken breast in the flour, shaking off any excess. Dip it into the beaten eggs, then coat it with the breadcrumb mixture, pressing gently to adhere.
  5. In a large skillet, heat the olive oil over medium heat. Add the breaded chicken breasts and cook for about 4-5 minutes on each side, until golden brown.
  6. Transfer the browned chicken to a baking dish. Spoon marinara sauce over each piece, then top with sliced mozzarella cheese.
  7. Bake in the preheated oven for 20-25 minutes, or until the chicken is cooked through and the cheese is melted and bubbly.
  8. Remove from the oven and sprinkle with chopped basil before serving.

Notes

  • For added flavor, marinate the chicken in Italian seasoning or lemon juice for 30 minutes before breading.
  • Swap out the marinara sauce for pesto for a different flavor profile, or use a combination of both for a unique twist.
