A delicious and hearty meatloaf wrapped in crispy bacon, infused with smoky bourbon BBQ flavors.

- 1 ½ pounds ground beef
- 1 cup breadcrumbs
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 large egg
- ½ cup milk
- 2 tablespoons Worcestershire sauce
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon smoked paprika
- ½ teaspoon dried thyme
- ½ cup barbecue sauce, plus extra for glazing
- 8 slices of bacon
- 2 tablespoons bourbon (optional)
Instructions
- Preheat your oven to 350°F.
- In a large mixing bowl, combine the ground beef, breadcrumbs, chopped onion, minced garlic, egg, milk, Worcestershire sauce, salt, pepper, smoked paprika, thyme, and ½ cup of barbecue sauce. Mix until well combined, but do not overmix.
- Shape the meat mixture into a loaf and place it in a baking dish or on a lined baking sheet.
- Wrap the bacon slices around the meatloaf, overlapping them slightly.
- If using bourbon, mix it with the remaining barbecue sauce and brush it over the bacon-wrapped meatloaf for added flavor.
- Bake in the preheated oven for 1 hour, or until the internal temperature reaches 160°F.
- During the last 10 minutes of cooking, brush additional barbecue sauce over the top for a sticky glaze.
- Once cooked, remove the meatloaf from the oven and let it rest for 10 minutes before slicing.
Notes
- For a spicier kick, add 1 teaspoon of cayenne pepper to the meat mixture.
- You can substitute ground turkey or chicken for a leaner option.
- Consider serving with a side of coleslaw or roasted vegetables for a complete meal.
