Description

A delicious and hearty meatloaf wrapped in crispy bacon, infused with smoky bourbon BBQ flavors.


Ingredients

  • 1 ½ pounds ground beef
  • 1 cup breadcrumbs
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 large egg
  • ½ cup milk
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon smoked paprika
  • ½ teaspoon dried thyme
  • ½ cup barbecue sauce, plus extra for glazing
  • 8 slices of bacon
  • 2 tablespoons bourbon (optional)

Instructions

  1. Preheat your oven to 350°F.
  2. In a large mixing bowl, combine the ground beef, breadcrumbs, chopped onion, minced garlic, egg, milk, Worcestershire sauce, salt, pepper, smoked paprika, thyme, and ½ cup of barbecue sauce. Mix until well combined, but do not overmix.
  3. Shape the meat mixture into a loaf and place it in a baking dish or on a lined baking sheet.
  4. Wrap the bacon slices around the meatloaf, overlapping them slightly.
  5. If using bourbon, mix it with the remaining barbecue sauce and brush it over the bacon-wrapped meatloaf for added flavor.
  6. Bake in the preheated oven for 1 hour, or until the internal temperature reaches 160°F.
  7. During the last 10 minutes of cooking, brush additional barbecue sauce over the top for a sticky glaze.
  8. Once cooked, remove the meatloaf from the oven and let it rest for 10 minutes before slicing.

Notes

  • For a spicier kick, add 1 teaspoon of cayenne pepper to the meat mixture.
  • You can substitute ground turkey or chicken for a leaner option.
