A flavorful and healthy Smoky BBQ Zucchini Casserole that combines tender zucchini, shredded chicken, and a blend of cheeses, all topped with a smoky BBQ sauce.

- 2 medium zucchinis, sliced into thin rounds
- 1 medium onion, diced
- 1 red bell pepper, diced
- 2 cups cooked shredded chicken (or canned chicken)
- 1 cup BBQ sauce (your favorite brand)
- 1 cup shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- 1 teaspoon smoked paprika
- 1/2 teaspoon garlic powder
- 1/2 teaspoon black pepper
- 1/2 teaspoon salt
- 1 tablespoon olive oil
- 1/4 cup chopped fresh parsley (for garnish)
Instructions
- Preheat your oven to 375°F (190°C).
- In a large skillet, heat the olive oil over medium heat. Add the diced onion and red bell pepper, sautéing until softened, about 5 minutes.
- Add the sliced zucchini to the skillet and cook for an additional 5 minutes, stirring occasionally, until the zucchini is slightly tender.
- In a large mixing bowl, combine the cooked chicken, BBQ sauce, smoked paprika, garlic powder, black pepper, and salt. Stir until well combined.
- Add the sautéed vegetables to the chicken mixture and stir until everything is evenly coated.
- Transfer the mixture to a greased 9×13-inch baking dish.
- Sprinkle the shredded cheddar and mozzarella cheese evenly over the top of the casserole.
- Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and golden brown.
- Remove from the oven and let it cool for 5 minutes. Garnish with chopped parsley before serving.
Notes
- For a vegetarian option, substitute the chicken with black beans or lentils.
- Add some corn or diced tomatoes for extra flavor and texture.
