A flavorful and healthy Smoky BBQ Zucchini Casserole that combines tender zucchini, shredded chicken, and a blend of cheeses, all topped with a smoky BBQ sauce.


Ingredients

  • 2 medium zucchinis, sliced into thin rounds
  • 1 medium onion, diced
  • 1 red bell pepper, diced
  • 2 cups cooked shredded chicken (or canned chicken)
  • 1 cup BBQ sauce (your favorite brand)
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1 tablespoon olive oil
  • 1/4 cup chopped fresh parsley (for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, heat the olive oil over medium heat. Add the diced onion and red bell pepper, sautéing until softened, about 5 minutes.
  3. Add the sliced zucchini to the skillet and cook for an additional 5 minutes, stirring occasionally, until the zucchini is slightly tender.
  4. In a large mixing bowl, combine the cooked chicken, BBQ sauce, smoked paprika, garlic powder, black pepper, and salt. Stir until well combined.
  5. Add the sautéed vegetables to the chicken mixture and stir until everything is evenly coated.
  6. Transfer the mixture to a greased 9×13-inch baking dish.
  7. Sprinkle the shredded cheddar and mozzarella cheese evenly over the top of the casserole.
  8. Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and golden brown.
  9. Remove from the oven and let it cool for 5 minutes. Garnish with chopped parsley before serving.
