Instructions
- Begin by boiling a large pot of salted water and cook the spaghetti or fettuccine according to the package directions until it reaches an al dente texture. Once done, save a cup of the pasta water and drain the rest, setting the pasta aside.
- In a skillet, warm the olive oil over medium heat and add the chopped garlic, cooking it for about a minute until it releases its aroma, ensuring it doesn’t brown.
- In a separate bowl, whisk together the eggs, heavy cream, and grated Parmesan cheese until the mixture is smooth and creamy. Season it with salt and black pepper to enhance the flavors.
- Transfer the drained pasta into the skillet with the sautéed garlic, tossing it gently to coat the strands with the oil. Take the skillet off the heat to prevent the eggs from scrambling.
- Pour the egg and cream mixture over the pasta, stirring continuously to create a luscious sauce. If the sauce appears too thick, gradually mix in the reserved pasta water until you achieve your desired creaminess.
- Carefully fold in the diced smoked salmon, ensuring it’s evenly distributed throughout the pasta.
- Plate the dish immediately, garnishing with freshly chopped parsley and an extra sprinkle of Parmesan cheese if you like.
