A delicious and easy Slow Cooker Mongolian Beef recipe perfect for a weeknight dinner.
Ingredients

- 1 ½ pounds flank steak, sliced thin against the grain
- ¼ cup soy sauce
- ¼ cup brown sugar
- 2 tablespoons cornstarch
- 1 tablespoon vegetable oil
- 1 teaspoon minced garlic
- 1 teaspoon minced ginger
- ½ cup beef broth
- 1 cup green onions, chopped (reserve some for garnish)
- Cooked white rice, for serving
Instructions
- In a bowl, combine soy sauce, brown sugar, cornstarch, vegetable oil, minced garlic, and minced ginger. Whisk until smooth.
- Place the sliced flank steak in the slow cooker and pour the sauce mixture over the beef. Stir to coat the meat evenly.
- Add the beef broth to the slow cooker and mix well.
- Cover and cook on low for 5-6 hours or on high for 3-4 hours, until the beef is tender.
- About 30 minutes before serving, stir in the chopped green onions.
- Serve over cooked white rice and garnish with additional green onions if desired.
Notes
- For a spicier kick, add a teaspoon of red pepper flakes to the sauce mixture.
- Substitute flank steak with sirloin or chuck roast for a different flavor and texture.
