Description
A hearty and delicious Slow Cooker Cowboy Casserole that is perfect for feeding a crowd, combining ground beef, beans, corn, and tater tots topped with melted cheese.

- 2 pounds ground beef
- 1 medium onion, diced
- 1 bell pepper, diced
- 2 cloves garlic, minced
- 1 (15-ounce) can black beans, drained and rinsed
- 1 (15-ounce) can corn, drained
- 1 (15-ounce) can diced tomatoes with green chilies
- 1 (10.5-ounce) can cream of mushroom soup
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 4 cups frozen tater tots
- 2 cups shredded cheddar cheese
- 1/2 cup sliced green onions (for garnish)
Instructions
- In a large skillet over medium heat, brown the ground beef with the diced onion, bell pepper, and minced garlic until the meat is cooked through and the vegetables are tender. Drain any excess fat.
- In the slow cooker, combine the cooked beef mixture, black beans, corn, diced tomatoes, cream of mushroom soup, chili powder, cumin, salt, and black pepper. Stir well to combine.
- Layer the frozen tater tots evenly on top of the beef mixture in the slow cooker.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the tater tots are golden and crispy.
- About 15 minutes before serving, sprinkle the shredded cheddar cheese over the tater tots. Cover and let it melt.
- Serve hot, garnished with sliced green onions.
Notes
- For a spicier kick, add diced jalapeños to the beef mixture.
- You can substitute ground turkey or chicken for a leaner option.
- For a vegetarian version, replace the meat with additional beans and use a plant-based cream of mushroom soup.
