A flavorful and hearty Slow Cooker Beef Madras Curry that is perfect for a comforting meal.

- 2 pounds beef chuck, cut into 1-inch cubes
- 2 tablespoons vegetable oil
- 1 large onion, finely chopped
- 4 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 2 tablespoons Madras curry powder
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon turmeric
- 1/2 teaspoon cayenne pepper (adjust for spice preference)
- 1 can (14 ounces) diced tomatoes
- 1 can (14 ounces) coconut milk
- 1 tablespoon brown sugar
- 1 tablespoon soy sauce
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup beef broth
- 1 cup frozen peas
- Fresh cilantro, for garnish
Instructions
- In a large skillet, heat the vegetable oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Stir in the garlic and ginger, cooking for an additional minute until fragrant.
- Add the beef cubes to the skillet and brown them on all sides, about 5-7 minutes.
- Transfer the beef mixture to the slow cooker. Add the Madras curry powder, ground cumin, ground coriander, turmeric, cayenne pepper, diced tomatoes, coconut milk, brown sugar, soy sauce, salt, black pepper, and beef broth. Stir well to combine.
- Cover the slow cooker and cook on low for 8 hours or on high for 4 hours, until the beef is tender.
- About 30 minutes before serving, stir in the frozen peas and cover again.
- Once cooked, taste and adjust seasoning if necessary. Serve hot, garnished with fresh cilantro.
Notes
- For a thicker curry, remove the lid during the last hour of cooking to allow some liquid to evaporate.
- Substitute the beef with chicken thighs for a lighter version or use chickpeas for a vegetarian option.
