Description

Slow Cooker Beef Gyros is a tender and flavorful dish made with seasoned beef, served in warm pita bread with fresh vegetables and tzatziki sauce.


Ingredients

  • 2 pounds beef chuck roast, trimmed and cut into large chunks
  • 2 tablespoons olive oil
  • 1 large onion, sliced
  • 4 cloves garlic, minced
  • 2 teaspoons dried oregano
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 cup beef broth
  • 1 tablespoon red wine vinegar
  • 4 pita breads
  • 1 cup cucumber, diced
  • 1 cup tomatoes, diced
  • 1 cup lettuce, shredded
  • 1 cup tzatziki sauce

Instructions

  1. In a large skillet, heat olive oil over medium-high heat. Add the beef chunks and sear on all sides until browned, about 5-7 minutes. Transfer the beef to the slow cooker.
  2. In the same skillet, add sliced onion and cook until softened, about 3-4 minutes. Stir in minced garlic, oregano, cumin, paprika, salt, and pepper; cook for another minute until fragrant.
  3. Pour the beef broth and red wine vinegar into the skillet, scraping up any browned bits from the bottom. Pour this mixture over the beef in the slow cooker.
  4. Cover and cook on low for 8 hours or on high for 4 hours, until the beef is tender and easily shredded.
  5. Once cooked, shred the beef with two forks and stir it back into the juices.
  6. To serve, warm the pita breads and fill each with shredded beef, diced cucumber, tomatoes, shredded lettuce, and a generous dollop of tzatziki sauce.

Notes

  • For a spicier kick, add a pinch of cayenne pepper or some sliced jalapeños to the slow cooker.
  • Substitute the beef with chicken thighs for a lighter version, adjusting the cooking time to 6 hours on low or 3 hours on high.
