Ingredients

  • 3 to 4 pounds beef chuck roast
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 cup beef broth
  • 1 cup cranberry juice (unsweetened)
  • 1/2 cup balsamic vinegar
  • 1/4 cup brown sugar
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 bay leaf

Instructions

  1. Preheat your oven to 300°F (150°C).
  2. Season the beef roast with salt and black pepper on all sides.
  3. In a large Dutch oven, heat the olive oil over medium-high heat. Sear the beef roast for about 4-5 minutes on each side until browned. Remove the roast and set aside.
  4. In the same pot, add the chopped onion and garlic. Sauté for 3-4 minutes until softened.
  5. Pour in the beef broth, cranberry juice, balsamic vinegar, and brown sugar. Stir to combine.
  6. Add the thyme, rosemary, and bay leaf to the pot. Return the beef roast to the pot, ensuring it is submerged in the liquid.
  7. Cover the pot with a lid and transfer it to the preheated oven. Braise for 3 to 4 hours, or until the beef is fork-tender.
  8. Once cooked, remove the roast from the pot and let it rest for 10-15 minutes before slicing.
  9. Skim any excess fat from the surface of the cooking liquid. If desired, simmer the liquid on the stove for 10 minutes to thicken it slightly.
  10. Serve the sliced beef with the cranberry balsamic glaze drizzled over the top.

Notes

  • For a richer flavor, add a splash of red wine to the braising liquid.
  • Serve with mashed potatoes or roasted vegetables for a complete meal.
