- 3 to 4 pounds beef chuck roast
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1 cup beef broth
- 1 cup cranberry juice (unsweetened)
- 1/2 cup balsamic vinegar
- 1/4 cup brown sugar
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 bay leaf
Instructions
- Preheat your oven to 300°F (150°C).
- Season the beef roast with salt and black pepper on all sides.
- In a large Dutch oven, heat the olive oil over medium-high heat. Sear the beef roast for about 4-5 minutes on each side until browned. Remove the roast and set aside.
- In the same pot, add the chopped onion and garlic. Sauté for 3-4 minutes until softened.
- Pour in the beef broth, cranberry juice, balsamic vinegar, and brown sugar. Stir to combine.
- Add the thyme, rosemary, and bay leaf to the pot. Return the beef roast to the pot, ensuring it is submerged in the liquid.
- Cover the pot with a lid and transfer it to the preheated oven. Braise for 3 to 4 hours, or until the beef is fork-tender.
- Once cooked, remove the roast from the pot and let it rest for 10-15 minutes before slicing.
- Skim any excess fat from the surface of the cooking liquid. If desired, simmer the liquid on the stove for 10 minutes to thicken it slightly.
- Serve the sliced beef with the cranberry balsamic glaze drizzled over the top.
Notes
- For a richer flavor, add a splash of red wine to the braising liquid.
- Serve with mashed potatoes or roasted vegetables for a complete meal.
