A decadent dessert that will impress your family and friends, this Sky-High Chocolate Mousse Pie features a rich chocolate filling in a graham cracker crust.


Ingredients

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 1 cup semi-sweet chocolate chips
  • 2 cups heavy whipping cream
  • ½ cup powdered sugar
  • 1 teaspoon vanilla extract
  • 4 large egg whites
  • ¼ teaspoon salt
  • ½ cup granulated sugar
  • Chocolate shavings or cocoa powder for garnish (optional)

Instructions

  1. Preheat your oven to 350°F. In a medium bowl, combine the graham cracker crumbs and melted butter. Mix until well combined, then press the mixture firmly into the bottom and up the sides of a 9-inch pie pan. Bake for 8-10 minutes until lightly golden. Remove from the oven and let cool completely.
  2. In a microwave-safe bowl, melt the semi-sweet chocolate chips in 30-second intervals, stirring between each until smooth. Allow the chocolate to cool slightly.
  3. In a large mixing bowl, whip the heavy cream, powdered sugar, and vanilla extract together until soft peaks form. Be careful not to overwhip.
  4. In another bowl, beat the egg whites and salt until soft peaks form. Gradually add the granulated sugar and continue beating until stiff peaks form.
  5. Gently fold the melted chocolate into the whipped cream until combined. Then, carefully fold in the beaten egg whites in three additions, being cautious not to deflate the mixture.
  6. Pour the chocolate mousse filling into the cooled graham cracker crust, smoothing the top with a spatula. Refrigerate for at least 4 hours or until set.
  7. Before serving, garnish with chocolate shavings or a dusting of cocoa powder if desired.

Notes

  • For an extra touch, try adding a layer of fresh raspberries or strawberries on top of the mousse before chilling.
  • You can substitute the semi-sweet chocolate with dark chocolate for a richer flavor.
