- 2 cups rhubarb, chopped into 1-inch pieces
- 1 cup granulated sugar
- 1 cup water
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon (optional)
Instructions
- In a medium saucepan, combine the sugar and water over medium heat. Stir until the sugar is completely dissolved.
- Add the chopped rhubarb to the saucepan and bring the mixture to a gentle simmer.
- Reduce the heat to low and let it simmer for about 10-15 minutes, or until the rhubarb is tender but still holds its shape.
- Stir in the vanilla extract and ground cinnamon, if using.
- Remove the saucepan from heat and allow the rhubarb to cool in the syrup for at least 30 minutes.
- Once cooled, transfer the rhubarb and syrup to a jar or airtight container. Refrigerate for up to 2 weeks.
