Description

Simply Divine Candied Rhubarb is a sweet and tangy treat that brings out the best in rhubarb, perfect for desserts or as a topping.

Ingredients

Scale
  • 2 cups rhubarb, chopped into 1-inch pieces
  • 1 cup granulated sugar
  • 1 cup water
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon (optional)

Instructions

  1. In a medium saucepan, combine the sugar and water over medium heat. Stir until the sugar is completely dissolved.
  2. Add the chopped rhubarb to the saucepan and bring the mixture to a gentle simmer.
  3. Reduce the heat to low and let it simmer for about 10-15 minutes, or until the rhubarb is tender but still holds its shape.
  4. Stir in the vanilla extract and ground cinnamon, if using.
  5. Remove the saucepan from heat and allow the rhubarb to cool in the syrup for at least 30 minutes.
  6. Once cooled, transfer the rhubarb and syrup to a jar or airtight container. Refrigerate for up to 2 weeks.

Notes

  • Serve the candied rhubarb over vanilla ice cream or yogurt for a delicious dessert.
  • For a twist, add a splash of orange juice or zest to the syrup for a citrusy flavor.
