- 1 pound cooked shrimp, peeled and deveined
- 1 cup celery, diced
- 1/2 cup red bell pepper, diced
- 1/4 cup red onion, finely chopped
- 1/2 cup mayonnaise
- 1 tablespoon Dijon mustard
- 1 tablespoon lemon juice
- 1 teaspoon Old Bay seasoning
- Salt and pepper to taste
- 2 cups mixed greens (for serving)
- Lemon wedges (for garnish)
Instructions
- In a large mixing bowl, combine the cooked shrimp, celery, red bell pepper, and red onion.
- In a separate small bowl, whisk together the mayonnaise, Dijon mustard, lemon juice, Old Bay seasoning, salt, and pepper until smooth.
- Pour the dressing over the shrimp mixture and gently toss until everything is well coated.
- Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld.
- Serve the shrimp salad over a bed of mixed greens and garnish with lemon wedges.
Notes
- For a spicy kick, add diced jalapeños or a dash of hot sauce to the dressing.
